Ingredients
2 lbs beef stew meat, cut into 1-inch pieces
1/4 cup all-purpose flour
2 tablespoons vegetable oil
1 large onion, chopped
2 carrots, peeled and sliced
2 potatoes, peeled and diced
3 cloves garlic, finely chopped
4 cups beef broth
1 cup red wine
2 tablespoons tomato paste
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions
1. Season the beef stew meat with salt and pepper, then dust with flour.
2. Heat the vegetable oil in a large saucepan or Dutch oven over medium-high heat.
3. Add the beef to the pan and sear on all sides until browned. Remove the beef from the pan and set aside.
4. In the same pan, add the chopped onion and garlic. Sauté until the onion is translucent and the garlic is fragrant.
5. Add the tomato paste and dried herbs (rosemary and thyme) to the onion and garlic, stir well to combine.
6. Pour in the red wine, scraping the bottom of the pan to loosen any bits. Let the wine simmer for a couple of minutes to reduce slightly.
7. Return the browned beef to the pan along with the chopped carrots, diced potatoes, and beef broth.
8. Bring the stew to a boil, then reduce heat to low, cover, and let it simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
9. Season with additional salt and pepper if needed, and garnish with chopped parsley before serving, if desired.
