Instructions
1. Preheat your oven to 425 degrees F (220 degrees C).
2. In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
3. Add the cold, cubed butter to the mixture. Use your fingers to break up the butter and mix it into the flour until it resembles coarse crumbs.
4. Stir in the butterscotch chips.
5. Pour in the cream soda, whole milk, and vanilla extract. Stir until just combined; do not overmix.
6. Turn the dough out onto a floured surface and knead it gently a few times until it holds together. Flatten it into a disk about 1 inch thick.
7. Use a cookie cutter or sharp knife to cut out biscuits from the dough. Place them onto a baking sheet.
8. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
9. Allow the biscuits to cool for a few minutes before serving. Enjoy your Butterbeer Biscuits warm with a cup of tea or coffee!
