6 Servings

Ingredients

  1. 1kg beef roasting joint (In the absence of actual Dragons, any roasting meat will serve)

  2. 3 large potatoes, quartered

  3. 2 medium onions, quartered

  4. 2 large carrots, chopped into large chunks

  5. 3 garlic cloves, minced

  6. 1 tsp dried rosemary

  7. 1 tsp dried thyme

  8. Salt and black pepper to taste

  9. 2 tbsp olive oil

  10. 1 cup of ale (Preferably Mahakam Ale, a staple in the Witcher series)

  11. 1 cup of beef broth

Cooking Utensils

  1. Large roasting pan

  2. Aluminum foil

  3. Meat thermometer

  4. Sharp knife

  5. Chopping board

  6. Mixing bowl

  7. Stirring spoon

Instructions

1. Preheat the oven to 375°F (190°C).

2. Place the beef joint in the center of your roasting pan. Surround it with the quartered potatoes, onions, and large carrot chunks.

3. In a mixing bowl, combine the minced garlic, rosemary, thyme, salt, and pepper with the olive oil. Rub this mixture all over the beef, ensuring it's well coated.

4. Pour the ale and beef broth into the bottom of the roasting pan. This will keep the meat moist and provide a base for our mythical dragon-inspired gravy.

5. Cover the roasting pan with aluminium foil and place in the preheated oven.

6. Roast for approximately 1.5 to 2 hours, or until the meat reaches your desired level of doneness. Use a meat thermometer for accuracy; 145°F (63°C) for medium rare and 160°F (71°C) for medium.

7. Once done, remove the roasting pan from the oven and let the roast rest, covered, for about 15 minutes.

8. Carve the roast into slices and serve hot with the roasted vegetables and some of the pan juices drizzled on top. Enjoy your feast worthy of a bard’s ballad!
