Ingredients
7.5 ounces lightly crushed specialty grains (choose from pale ale, caramel, or honey malt)
6 lbs. of light malt extract
1 lbs. of honey (for a more unique flavor, consider using clover or wildflower honey)
1.5 ounces of hop pellets of your choice
1/4 ounce of crushed dried chili peppers
6 gallons of purified water
1 package of brewing yeast

Instructions
1. Start by brewing the specialty grains in a malt bag in 2.5 gallons of water at 155°F for about 20 mins.
2. Remove the specialty grains, leaving the liquid.
3. Add light malt extract and honey to the pot. Bring the mixture to a boil.
4. Once boiling, add the hop pellets. Boil for 60 minutes, stirring occasionally.
5. For the last 10 minutes of boiling, add the crushed chili peppers.
6. After boiling, turn off the heat and let the wort cool to about 70°F.
7. Transfer the wort to the fermenting bucket and top up with purified water to reach the 1-gallon mark.
8. Sprinkle the brewing yeast onto the wort. Close the fermenting bucket with an airlock.
9. Store the fermenting bucket in a dark, cool place and leave it to ferment for two weeks.
10. After the fermentation process, siphon the ale into a bottling bucket.
11. Transfer the ale to clean bottles and cap them.
12. Store the bottles in a cool, dark place for at least one more week to allow carbonation to occur.
