Ingredients
2 pounds of lamb leg
4 garlic cloves
1 tablespoon rosemary leaves
1 tablespoon thyme leaves
1 tablespoon basil leaves
1 lemon zest
1 teaspoon of salt
1/2 teaspoon of black pepper
2 tablespoons of olive oil
1 cup red wine
1 cup water

Instructions
1. Preheat the oven to 400°F (200°C).
2. Chop and mix garlic, rosemary, thyme, and basil in a mixing bowl.
3. Grate the zest of one lemon and add it to the mix with salt, pepper, and olive oil.
4. Rub the herb mixture all over the lamb leg, making sure to push some into the slits of the meat.
5. In a roasting pan, pour the wine and water at the bottom, placing the prepared lamb leg on top.
6. Roast it in the preheated oven for approximately 90 minutes. Use a meat thermometer to check the doneness (internal temperature should be around 145°F for medium-rare, 160°F for medium).
7. Once cooked to your liking, let it rest for about 10-15 minutes before carving and serving.
