Instructions
1. Preheat your oven to 375 degrees Fahrenheit.
2. Place the wild boar in a large roasting pan with the skin side up.
3. In a mixing bowl, combine minced garlic, salt, pepper, rosemary, and thyme to create a herb rub.
4. Rub this mixture all over the boar, trying to cover as much as possible. Make sure to get into any nooks and crannies.
5. After the boar is adequately covered, pour the bottle of dry red wine into the roasting pan.
6. Scatter the chopped carrots, onions, and quartered potatoes around the boar in the roasting pan.
7. Put the pan in the preheated oven and roast for about 3 hours, or until the meat reaches an internal temperature of 160 degrees Fahrenheit.
8. Once cooked, let the boar rest for a good 20 minutes before carving. This allows the juices to get reabsorbed, making the meat more tender and flavorful.
