Ingredients

  1. 2 large dragon fruits

  2. 1 cup of sugar

  3. 2 tablespoons of lemon juice

  4. Mint leaves for garnish

Cooking Utensils

  1. Blender or food processor

  4. Freezer-safe container with a lid

  5. Ice cream scoop

Instructions

1. Halve the dragon fruit and scoop out the flesh, placing it in a blender or food processor.

2. Blend until the dragon fruit is pureed.

3. Strain the pureed dragon fruit through a sieve into a bowl to separate the juice from the seeds.

4. In a separate bowl, combine the dragon fruit juice with the sugar, stirring until the sugar is completely dissolved.

5. Add the lemon juice to the dragon fruit and sugar mixture and stir until combined.

6. Pour the mixture into a freezer-safe container and place the lid on the container.

7. Freeze for at least 4 hours, but ideally overnight.

8. Serve straight from the freezer, using an ice cream scoop to serve into bowls.

9. Garnish with mint leaves before serving.
