Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 bell peppers, any color, chopped
1 medium dragon fruit (Pitaya), peeled and cubed
1 pound beef stew meat, cubed
1 tablespoon smoked paprika
2 teaspoons cayenne pepper
Salt and black pepper to taste
4 cups bone broth or vegetable stock
2 large tomatoes, chopped
1/4 cup freshly chopped parsley
Lemon slices, to garnish

Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, and bell peppers. Cook for 5-7 minutes until the vegetables are softened.
3. Add the beef stew meat and continue to cook until the meat is browned on all sides. This would take about 5 minutes.
4. Sprinkle the smoked paprika, cayenne pepper, salt, and black pepper over the meat and vegetables. Stir to coat.
5. Add the cubed dragon fruit to the pot, followed by the bone broth or vegetable stock and the chopped tomatoes.
6. Stir well to combine all the ingredients. Reduce the heat to low and let the stew simmer for about 2 hours, until the beef is tender and the stew has thickened.
7. Once the stew is ready, stir in the freshly chopped parsley and serve hot, garnished with a slice of lemon. Enjoy your Dragonfire Stew, worthy of any feast in Westeros.
