Ingredients

  1. 2 lbs venison, cut into chunks

  2. 2 cups of ripe elderberries

  3. 6 cups of beef broth

  4. 2 large carrots, chopped

  5. 2 large parsnips, chopped

  6. 1 large onion, diced

  7. 3 garlic cloves, minced

  8. 2 tablespoons olive oil

  9. 1 teaspoon dried rosemary

  10. 1 teaspoon dried thyme

  11. salt and pepper to taste

  12. Fresh parsley for garnish

Cooking Utensils

  1. Large soup pot

  2. Cutting board

  3. Knife

  4. Measuring cups/spoons

  5. Mixing spoon

Instructions

1. Heat the olive oil in large pot over medium heat.

2. Add the venison to the pot and brown on all sides. Remove from the pan and set it aside.

3. In the same pot, add the onions, carrots, and parsnips, stirring often until they start to soften.

4. Stir in the garlic, rosemary, thyme, and cook for another minute.

5. Return venison back to the pot and add the beef broth. Allow the stew to simmer for about an hour, or until venison is tender.

6. Stir in the elderberries.

7. Let the stew cook for another 15 minutes.

8. Add salt and pepper to taste and garnish with fresh parsley before serving.
