2 eggs
1 cup milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen elderberries

Instructions
1. Preheat your oven to 375 degrees Fahrenheit.
2. Line your muffin tin with paper cups.
3. In a large bowl, combine flour, sugar, baking powder, and salt.
4. In another bowl, beat the eggs.
5. Add the milk, melted butter, and vanilla extract to the eggs and mix well.
6. Pour this mixture into the flour mixture and stir just until moistened, don't over-mix.
7. Gently fold in the elderberries.
8. Fill the muffin cups 3/4 full with batter.
9. Bake in the preheated oven for about 15-20 minutes, or until muffins are golden brown.
10. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
