Ingredients

  1. 2 litres spring water

  2. 2 handfuls of fresh mint leaves

  3. 6 fresh leaves of lemon balm

  4. 1 tablespoon dried elderflowers (optional)

  5. 4 teaspoons raw honey

  6. Juice of 2 lemons

  7. Ice cubes

  4. Strainer

  6. Juicer

  7. Glass

Instructions

1. Start by pouring the spring water into a large pot.

2. Put the pot on the stove and slowly heat the water until it's warm, but not boiling.

3. Meanwhile, pick off the leaves from the mint and lemon balm. Tear them roughly with your hands.

4. Once the water is warm, add the torn mint leaves, lemon balm and dried elderflowers (if using).

5. Let the mixture simmer gently on the stove for about 20 minutes. This process allows the flavors and properties from the leaves to infuse into the water.

6. After 20 minutes, remove the pot from the heat and let the mixture cool for another 20 minutes.

7. Once the mixture has cooled off, strain it into a pitcher, squeezing the leaves to extract as much of their essence as possible.

8. Sweeten your draught with honey, stirring in one teaspoon at a time. Remember that every tree is unique in its sweetness, so do a taste check before pouring in all your honey.

9. Add the freshly squeezed juice from the lemons.

10. Fill your glasses with ice cubes, pour over your ent-draught and serve your guests an elixir fit for the Ents of Fangorn forest.
