Ingredients
2 pounds of beef stew meat (for vegan option, substitute with 2 pounds of cubed winter squash)
3 large carrots, cubed
2 medium-sized parsnips, cubed
1 large onion, chopped
4 cloves of garlic, minced
3 medium-sized potatoes, peeled and cubed
8 cups of vegetable broth
2 cups of water
2 tablespoons of vegetable oil
2 tablespoons of flour
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
Salt and pepper to taste

Instructions
1. Season beef stew meat or winter squash with salt and pepper, then coat with flour.
2. Heat vegetable oil in the stew pot over medium heat.
3. Add the meat or squash to the pot and brown on all sides. Remove and set aside.
4. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
5. Add carrots, parsnips, and potatoes to the pot and cook for a couple of minutes.
6. Pour in the vegetable broth and water, scraping the bottom of the pot to get all the flavors.
7. Return the meat or squash to the pot.
8. Add dried thyme and rosemary.
9. Cover and simmer for about 2 hours or until the meat or vegetables are tender.
10. Adjust seasoning if needed. Serve the Frostbitten Winter Stew hot. Enjoy this warm, hearty stew inspired by The Chronicles of Narnia's eternal winter.
