Ingredients
2 tablespoons olive oil
1 large white onion, finely chopped
3 cloves garlic, minced
2 medium zucchinis, diced
1 large potato, peeled and diced
6 cups vegetable broth
1 cup fresh spinach leaves
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley for garnish

Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the onion and garlic to the pot and sauté until the onions become translucent.
3. Add the diced zucchinis and potato to the pot and stir to combine.
4. Pour the vegetable broth into the pot, bring the mixture to a boil.
5. Once boiling, reduce the heat and let the soup simmer for about 20 minutes, or until the potato is tender.
6. Add the spinach leaves to the pot and stir until they are wilted.
7. Take the pot off the heat and using a blender or immersion blender, puree the soup until smooth.
8. Add the lemon juice to the soup and stir to combine. Season with salt and pepper to taste.
