Ingredients

  1. 2 cups of all-purpose flour

  2. 1 cup granulated sugar

  3. 3 teaspoons of baking powder

  4. 1 teaspoon of salt

  5. 1 cup of milk

  6. 3 tablespoons of vegetable oil

  7. 1 egg

  8. 1 cup of elderflowers (if not available, elderflower cordial can be used as a substitute)

  9. 4 tablespoons of honey

  10. Zest of one lemon

  4. Greased loaf pan

  5. Wire cooling rack

Instructions

1. Preheat your oven to 180°C (350°F), and grease the loaf pan.

2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.

3. Beat in the milk, vegetable oil, and egg until the mixture is smooth.

4. If using fresh elderflowers, carefully remove the flowers from the stems and gently wash them. Dry thoroughly. If using elderflower cordial, add directly to the mixture.

5. Blend the elderflowers or elderflower cordial into the mixture.

6. Pour the mixture into the greased loaf pan.

7. Bake the bread in the preheated oven for about 60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

8. Remove the bread from the oven and allow it to cool for 5 minutes.

9. While the bread is still warm, drizzle with honey and sprinkle with lemon zest.

10. Allow the bread to cool completely on a wire rack before slicing and serving.
