Ingredients

  1. 2 cups of cooked quinoa

  2. 1 cup chopped tomatoes

  3. 1 cup cubed butternut squash

  4. 1 cup of canned chickpeas, drained and rinsed

  5. 2 cups of spinach leaves

  6. 1/2 cup of feta cheese

  7. 2 tablespoons of olive oil

  8. Salt and pepper to taste

  9. 1/2 cup of balsamic vinegar reduction

Instructions

1. Preheat your oven to 200 degrees Celsius.

2. Toss the cubed butternut squash in a tablespoon of olive oil, salt, and pepper. Spread out on a baking pan and roast for about 20 minutes until it is soft and slightly browned.

3. While the squash is roasting, cook the quinoa according to package instructions.

4. Once the quinoa and squash are ready, assemble the grain bowls. Divide the quinoa evenly among four serving bowls.

5. On top of the quinoa, arrange the roasted squash, chopped tomatoes, chickpeas, and spinach leaves.

6. Crumble the feta cheese on top.

7. Drizzle the remaining olive oil and the balsamic reduction over the each bowl, add salt and pepper to your taste.

8. Serve while warm, and enjoy this hearty, Hufflepuff-inspired meal!
