Ingredients
1 1/4 cups of fine-ground almond flour
1/4 cup of coconut flour
1 teaspoon of baking soda
1/4 teaspoon of sea salt
2 large eggs
1/4 cup of maple syrup
2 tablespoons of coconut oil
8 slices of white cheese
4 large lettuce leaves
8 slices of ripe tomatoes
1/2 cucumber, sliced
4 tablespoons of mayonnaise

Instructions
1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and line your baking tray with parchment paper.
2. In a bowl, combine the almond flour, coconut flour, baking soda, and sea salt. Mix well.
3. Add the eggs, maple syrup, and melted coconut oil. Stir until a dough forms.
4. Shape the dough into a rectangle and place it onto the lined baking tray.
5. Bake for about 15 minutes or until the bread becomes golden brown.
6. Remove the bread from the oven and let it cool completely.
7. Once cooled, cut the bread into 8 equal pieces to make 4 sandwiches.
8. Spread a tablespoon of mayonnaise on each piece of bread.
9. Layer each sandwich with a piece of cheese, a lettuce leaf, two tomato slices, and cucumber slices.
10. Cover the filling with another piece of bread to form a sandwich.
11. Repeat steps 8-10 for the remaining bread pieces.
12. Serve the Lembas Bread Sandwiches immediately or pack them for a journey, just like the way Elves used to give them to travelers in Lord of the Rings. Enjoy!
