2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup mixed berries (e.g. blueberries, raspberries, or chopped strawberries)
Decorative silver sprinkles (optional for that Mithril sparkle)
Cooking Utensils
12-cup muffin pan
Large mixing bowl
Whisk
Rubber spatula
Ice cream scoop or ladle
Wire cooling rack
Instructions
1. Preheat your oven to 375 degrees F (190C) and line 12-cup muffin pan with paper liners.
2. In the large mixing bowl, combine the 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk these together until they are well mixed.
3. In a separate bowl, whisk together the 1 cup of milk, 1/2 cup of melted butter, 2 eggs, and 1 teaspoon of vanilla extract. Pour this wet mixture into the flour mixture, stirring with a rubber spatula until just combined. Do not overmix - the batter should still have some lumps.
4. Gently fold in the cup of mixed berries. If you want more “Mithril-like” muffins, use just blueberries for their rich, dark colour reminiscent of Mithril itself.
5. Using an ice cream scoop or a ladle, divide the batter evenly among the muffin cups. If opted, sprinkle the tops of the muffins with decorative silver sprinkles to give them a “Mithril” sparkle.
6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Allow the Mithril Muffins to cool in the pan for 5 minutes, then move them to a wire rack to cool completely. Enjoy your Middle-Earth inspired muffins for breakfast, dessert, or as a snack!
