Ingredients
4 cups vegetable broth
2 tablespoons unsalted butter
1 medium onion, finely diced
2 cloves of garlic, minced
1 large leaves from mistletoe plant* (spinach), picked and rinsed
Salt to taste
1/2 teaspoon ground black pepper
1/2 cup heavy cream
Fresh parsley for garnish
*Disclaimer: In the Chronicles of Narnia, Mistletoe leaves were safe to consume. However, in the real world, Mistletoe can be toxic if consumed. Please use Spinach leaves as a replacement while recreating this fantasy dish.

Instructions
1. In a large pot, melt the unsalted butter over medium heat.
2. Add the finely diced onion, and minced garlic and sauté until onions are translucent and the garlic is fragrant.
3. Add the vegetable broth, mistletoe* (spinach) leaves, salt, and ground black pepper, then increase heat to bring the mixture to a boil.
4. Once boiling, reduce heat and allow the soup to simmer about 20 minutes.
5. Transfer the soup to a blender and puree until smooth, then return the soup to the pot.
6. Stir in heavy cream and adjust seasoning if needed.
7. Ladle the Narnian Mistletoe Butter Soup into bowls, garnish with fresh parsley and serve hot.
