Ingredients

  1. 4 large tortilla wraps

  2. 2 bell peppers (mixed colors), thinly sliced

  3. 1 large red onion, thinly sliced

  4. 1 large carrot, grated

  5. 1 cup of chickpeas

  6. 1 cup of fresh spinach leaves

  7. 2 cloves of garlic, minced

  8. 1 tablespoon of olive oil

  9. 2 teaspoons of Narnian spice mix: combine ground cumin, ground coriander, paprika, turmeric, and a pinch of cinnamon

  10. Salt and black pepper to taste

  11. Vegan yogurt sauce: mix 1/2 cup of vegan yogurt, 1 teaspoon of lemon juice, and 1 teaspoon of Narnian spice mix.

Cooking Utensils

  1. Large pan

  2. Mixing bowl

  3. Wooden spatula

  4. Grater

Instructions

1. Heat the olive oil in a large pan on medium heat.

2. Add the thinly sliced onion, bell peppers, and minced garlic to the heated oil. Sauté until softened.

3. Add the chickpeas to the pan along with the Narnian spice mix.

4. Stir everything together allowing the chickpeas to become well coated and slightly crisped, about 5-7 minutes.

5. Season with salt and pepper according to your taste.

6. Warm your tortillas in a dry pan or the microwave.

7. Spread a layer of the vegan yogurt sauce on each tortilla.

8. Distribute the grated carrot and fresh spinach leaves evenly amongst the tortillas.

9. Scoop the sautéed veggies and chickpeas onto the prepared wraps.

10. Roll each wrap tightly and slice in half before serving. Enjoy your Narnian Spice Wrap!
