Ingredients
2 cups of all-purpose flour
1 tablespoon of granulated sugar
1 teaspoon of salt
2 teaspoons of baking powder
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
2 eggs
1 cup of milk
1 teaspoon of vanilla extract
Cooking oil (for frying)
Powdered sugar (for dusting)
Optional: Edible gold dust and red food color for phoenix feather-effect

Instructions
1. In a large mixing bowl, combine the two cups of flour, one tablespoon of sugar, one teaspoon of salt, two teaspoons of baking powder, a half teaspoon of cinnamon, and a quarter teaspoon of nutmeg.
2. In a separate bowl, whisk together two eggs, one cup of milk, and one teaspoon of vanilla extract.
3. Gradually add the wet ingredients into the dry ingredients, stirring until combined into a batter.
4. Heat the cooking oil in a frying pan or deep fryer. The oil should be about two inches deep.
5. Pour the batter into a piping bag fitted with a medium round nozzle. Pipe the batter into the hot oil, creating feather-like shapes.
6. Fry the fritters until they're golden brown on both sides, using the tongs or a slotted spoon to flip them.
7. Remove the fritters from the oil and drain on paper towels.
8. Dust the fritters with powdered sugar. For the phoenix feather effect, mix a little red food color with edible gold dust and lightly brush this over the fritters using a pastry brush.
