Ingredients
2 lbs stewing beef, cut into chunks
3 large carrots, peeled and sliced
2 large parsnips, peeled and sliced
3 medium potatoes, peeled and diced
2 onions, diced
4 cloves of garlic, minced
6 cups beef stock
3 tablespoons vegetable oil
Salt and pepper to taste
2 teaspoons dried rosemary
2 teaspoons dried thyme
1 cup of red wine (optional)
1 bay leaf
1/4 cup cornflour mixed with 1/4 cup cold water (for thickening)
Fresh parsley for garnish

Instructions
1. Begin by heating the vegetable oil over medium heat in a large pot.
2. Add the chunks of beef to the pot and season with salt and pepper. Cook until the beef is browned on all sides. Remove the beef from the pot and set it aside.
3. In the same pot, add the diced onions and minced garlic. Cook until the onions become translucent.
4. Add in the carrots, parsnips, and potatoes. Season with the dried thyme and rosemary. Cook for another 5-7 minutes, stirring occasionally.
5. If you're using red wine, pour it into the pot now to deglaze, scraping up any browned bits from the bottom of the pot with your wooden spoon.
6. Return the beef to the pot and add in the beef stock and bay leaf. Bring everything to a boil.
7. Once boiling, reduce the heat to low and allow the stew to simmer for about 1.5-2 hours, or until the beef is tender and the flavors are well combined.
8. To thicken the stew, slowly pour the cornflour-water mixture into the pot while stirring. Continue to cook the stew for another 10-15 minutes until the stew thickens to your liking.
