Ingredients

  1. 500g beef, cubed

  2. 300g venison (substitute for additional beef if unavailable), cubed

  3. 2 tablespoons vegetable oil

  4. 1 large onion, chopped

  5. 3 cloves garlic, minced

  6. 3 medium carrots, cut into chunks

  7. 3 parsnips, cut into chunks

  8. 750ml dark ale or stout

  9. 500ml beef broth

  10. 1 tablespoon Worcestershire sauce

  11. 2 teaspoons fresh thyme leaves

  12. 2 teaspoons fresh rosemary, chopped

  13. 1 bay leaf

  14. Salt and pepper to taste

Cooking Utensils

  1. Large pot or Dutch oven

  2. Knife

  3. Cutting board

  4. Wooden spoon

  5. Ladle

Instructions

1. Heat the oil in your pot or Dutch oven, seasoning the beef and venison with salt and pepper before browning them off. Remove meat and set it aside.

2. Lower the heat slightly, adding the onions to the pot and cooking until they're soft and translucent.

3. Add the garlic to the pot, cooking it until it just becomes fragrant.

4. Return the meat to the pot, adding the ale or stout, beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, carrots, and parsnips.

5. Cover the pot once it begins to bubble, reducing the heat so it can simmer for around 2 hours. You'll know it's ready when the meat is tender and the flavors have had time to blend together.

6. Season with additional salt and pepper if needed before serving hot.
