Ingredients
3 lbs raw honey
1 gallon water
1 packet champagne yeast
2 organic oranges
1 cup of raisins
4 cloves
1 stick of cinnamon
Zest and juice of two organic lemons
Cooking Utensils
1-gallon jug with airlock and stopper
Large pot
Sanitized funnel
Cheesecloth
Racking cane or siphon tube
Bottles for the final product
Instructions
1. In a large pot, bring your water to a boil.
2. Reduce the heat and add your raw honey, stirring until it is completely dissolved.
3. Add the peel and juice of your two oranges, as well as your cloves, cinnamon stick, and the zest and juice of your two lemons.
4. Allow this mixture to simmer on low heat for thirty minutes.
5. Pour your hot mixture into your sanitized one-gallon jug using a sanitized funnel.
6. Add your raisins to the jug.
7. Allow your mixture to cool to room temperature then add your yeast, shake well to mix.
8. Locker with airlock and store in a cool dark place for 4-6 weeks.
9. After the fermentation process has finished, it's time to clarify your mead. Here you'll use your racking cane or siphon tube to transfer the liquid to another one-gallon jug, leaving behind the sediment that has accumulated at the bottom.
10. Fit the new jug with an airlock and let it sit for another 2 weeks to continue clarifying.
11. After two weeks, siphon the mead once more into clean bottles and seal.
12. The mead can be enjoyed immediately but it will also develop interesting flavors if allowed to age.
