2 cups of dried white beans
4 cups of vegetable broth
1 large onion, diced
2 cloves of garlic, minced
2 medium carrots, diced
2 stalks of celery, diced
1 teaspoon of thyme
1 bay leaf
Salt and pepper to taste
Sprig of parsley for garnish

Instructions
1. Soak the white beans overnight.
2. Heat the vegetable broth in a large pot.
3. Add the diced onion, minced garlic, diced carrots, diced celery, thyme, and bay leaf into the pot.
4. Drain the beans and add them into the pot.
5. Simmer for 1.5 to 2 hours, or until the beans are tender.
6. Season with salt and pepper, to taste.
7. Garnish with fresh parsley before serving.
