Ingredients
2 tablespoons olive oil
1 large onion, diced
2 carrots, peeled and diced
3 celery stalks, diced
2 garlic cloves, minced
1 turnip, peeled and diced
1/2 small pumpkin, peeled and diced
2 medium potatoes, peeled and diced
4 cups vegetable broth
Salt and pepper to taste
A handful of fresh herbs (thyme, rosemary, and parsley)

Instructions
1. Heat the olive oil over medium heat in a large soup pot.
2. Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 10 minutes.
3. Add the minced garlic to the pot and cook for another minute.
4. Add the turnip, pumpkin, and potatoes to the pot.
5. Pour in the vegetable broth. Increase the heat to high and bring the soup to a boil.
6. Once boiling, reduce the heat to low and let the soup simmer until all the vegetables are tender, about 30 minutes.
7. Season the soup with salt and pepper to taste. Stir in the fresh herbs.
8. Serve the Winterfell Winter Soup hot, ideally with a side of crusty bread and a mug of ale to fully immerse yourself in the Game of Thrones experience. Enjoy!
