Ingredients

  1. 500g mixed fresh mushrooms

  2. 1 large onion

  3. 2 cloves garlic

  4. 2 tablespoons olive oil

  5. 2 pints vegetable stock

  6. Salt and cracked black pepper

Cooking Utensils

  1. Large pot

  2. Knife

  3. Blender

Instructions

1. Clean the mushrooms and slice them thinly.

2. Slice the onion and crush the garlic.

3. Using the large pot, heat the olive oil and add in the sliced onions and garlic.

4. Cook until the onions turn golden brown.

5. Add the sliced mushrooms to the pot and stir them in.

6. Cook for 10-15 minutes until the mushrooms soften.

7. Add the vegetable stock.

8. Simmer together for another 20 minutes.

9. Transfer half the soup to a blender and puree until smooth.

10. Return the pureed soup back to the pot and mix well. Season with salt and pepper.

11. The Elven Forest Mushroom Soup is ready to serve!
