Ingredients
2 lbs of beef stew cut into bite-size pieces
2 tablespoons of olive oil
1 large onion, chopped
4 cloves of garlic, minced
3 large carrots, peeled and chopped
2 large potatoes, peeled and chopped
1 red bell pepper, chopped
4 cups beef broth
1 can (14 oz) of diced tomatoes
2 tablespoons of paprika
1 teaspoon of ground coriander
Salt and pepper to taste
Fresh parsley for garnish

Large Dutch oven or heavy-bottomed pot

Instructions
1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
2. Add the beef to the pot, browning it on all sides. Once browned, remove the beef from the pot and set it aside.
3. In the same pot, add the chopped onion and minced garlic, cooking until softened and fragrant.
4. Return the beef to the pot and add in the chopped carrots, potatoes, and bell pepper. Stir to combine.
5. Add the beef broth, can of diced tomatoes, paprika, and ground coricander. Stir until the ingredients are well combined.
6. Bring the goulash to a boil before reducing the heat to low, allowing it to simmer. Cover the pot and let it cook for about 2 hours, or until the beef is tender.
7. Season the goulash with salt and pepper to taste.
